Anita's Easy Taco Casserole

  • 1 box cooked shell pasta drained
  • 1 lb chopped meat (beef, hamburger, turkey, chicken, etc)
  • 1 whole green pepper diced
  • 1 whole yellow pepper diced
  • 1 whole sweet onion diced
  • 1 jar salsa dip
  • 1/2 jar queso cheese dip
  • 1 cup sour cream
  • 1 and 1/2 bags or more shredded taco cheese blend
  • 1 1/2 Tbsp Cooking with Greens Tex Mex Blend
  • 1/2 Tbsp Cooking with Greens Spicy Lime Blend
  • 1 Tbsp Sugar
  • 2 tbsp olive oil

Preheat oven to 350 degrees. In a large skillet, add olive oil and vegetables to pan. Cook for about 3 minutes. Add in chopped meat. Cook until browned. Pour in salsa, cheese and sour cream and a bit of the shredded cheese. Add in Seasoning blends and sugar. Cook until well combined and cheese is melted. Tast and reseason if necessary. Mix in drained pasta. Pour mixture into a large baking pan. Top evenly with cheese. Bake for 15 minutes. Serve.
