Anita's Meatloaf

  • 1 lb veal
  • 1 1lb hamburger
  • 1/2 red bell pepper diced
  • 1/2 small onion diced
  • 1/2 cup bread crumbs
  • 1 egg
  • 1/2 package onion soup mix
  • 1 cup Sweet Baby Ray’s Barbecue sauce (or any other brand) Save half cup to coat meatloaf
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp celery salt
  • 1 tbsp olive oil
Saute vegetables in olive oil until softened. Set aside. In large bowl, mix remaining ingredients and 1/2 cup of sauce. Add in vegetables and shape into a shallow loaf on a non stick baking sheet. cover top of loaf with 1/2 cup of remaining bbq sauce
Place in 350 degrees oven for 45 minutes. Serve.
