Avocado Cheese Quesadillas

  • 1 tbsp Olive oil
  • 1 lb ground beef
  • 1 Tbsp Cooking with Greens Tex Mex Blend
  • 1/2 cup canned green chiles drained
  • 2 avocados, peeled, de-seeded and sliced
  • 8 inch flour tortillas
  • 1 16 oz can refried beans
  • 2 cups shredded Mozzarella cheese
  • 2 tbsp chopped cilantro or green onion

Preheat oven to 400 degrees and line a baking sheet with parchment paper. In a large skillet, add olive oil to medium high heat. Add ground beef until browned. Drain and mix in Tex Mex Blend and green chiles. Set aside. TOP TORTILLA WITH REFRIED BEANS, GROUND BEEF MIXTURE, SLICED AVOCADOS and Mozzerella and then top that with another tortilla. Place quesadillas onto baking sheet and bake in oven until cheese has melted Serve immediately and garnish with cilantro or green onion
