Broccoli and Cheese Corn Chicken Fritters with Ranch sauce
- 1 lb ground chicken
- 1 clove garlic minced
- 1 egg
- 3/4 cup panko crumbs
- 2 cups soft cooked broccoli finely chopped
- 1 cup corn
- 3/4 cup finely chopped shallots
- 1.5 to 2 cups shredded mozzarella or other cheese
- 2 tsp Cooking with Greens Go To Blend
- oil cooking spray
preheat oven to 400 degrees. Line a baking tray with parchment paper. Place all ingredients in bowl, mix to combine. Take about 1/4 cup mixture and pat into fritter shape. Place on baking sheet and spray generously with oil. Bake for 15 minutes, flip and spray with oil again. Bake for an additional 8 to 10 minutes until golden on top. Serve with ranch dipping sauce
RANCH SAUCE
- 3/4 cup lowfat plain yogurt
- 2 tsp Cooking with Greens Ranch Seasoning Blend
- 1 smal garlic clove minced finely
- 2 tsp olive oil
- 1/8 tsp fresh dill minced
- 1/8 tsp chives or green onion minced
- Optional squeeze of lemon juice
Mix all ingredients together. Let stand for about 20 minutes.
