Chicken Parmigiana
- 2 Tbsp olive oil
- 1 Tbsp tomato paste
- 1 onion chopped
- 1 28oz can (fire roasted) crushed tomatoes
- 3 cloves minced garlic
- 3 Tbsp fire roasted peppers in jar
- 1/2 tbsp Cooking with Greens No Salt Italian seasoning
- 1/2 tbsp Cooking With Greens Go To Seasoning
- 1 tsp Cooking with Greens Herb Blend
- 1/2 tbsp sugar
- 1 tsp Cooking With Greens No salt Onion black pepper
- 1/2 tsp pink Himalayan sea salt
CHICKEN
- 1/2 cup olive oil for frying
- 4 boneless skinless chicken thighs pounded flat
- 2 large egg
- 1 cup Panko breadcrumbs
- 1/2 cup Regular breadcrumbs
- 1/2 cup freshly grated parmesan cheese
- 2 tsp Cooking with Greens Go to Blend
- 1/4 tsp Cooking with Greens Pink Himalayan Sea Salt
- 1/8 tsp Cooking with Greens No Salt Onion Black Pepper blend
- 1 tbsp chopped parsley
TOPPING
- 1 cup shredded or sliced Mozzarella cheese
- 1/3 cup shredded Parmesan cheese
- 2 Tbsp fresh chopped basil
- Sprinkle of Cooking with Greens No Salt Herb Blend
Preheat oven to 430 degrees F. Lightly grease baking dish with non stick spray. Whisk egg, sea salt, Onion black pepper, parsley and 1 tsp Go To Blend in shallow dish. Add chicken coating evenly. Cover with plastic wrap and allow to marinate 15 mins or overnight. In a medium pot, add 2 tbsp olive oil and onions and peppers. Cook until onions are softened. Add garlic and cook for additional 30 seconds. Add in crushed tomatoes and fire roasted peppers. Add in tomato paste and all spices and sugar for sauce. Cover with lid and simmer for 8 mins. Taste and re-season if necessary. Once chicken is marinated, mix bread crumbs, panko, parmesan cheese and remaining Go To Blend in a separate bowl. Coat chicken evenly with this breading mix. Heat oil over medium high heat. Once heated, add chicken pieces, frying for 4 to 5 mins until golden brown on both sides. remove chicken from pan and place in baking dish (or pan). Top each with 1/3 cup sauce, Then evenly top with mozzarella and parmesan. Sprinkle with Herb blend. and Basil. Bake 15 to 20 mins until cheese is melted and bubbling
