Deep fried Snapper Thai style with Thai fish sauce

Deep fried Snapper Thai style with Thai fish sauce

  • 1 whole cleaned and scaled snapper (or other firm white fish)
  • 1/4 cup flour
  • 1/8 cup cornmeal
  • 1/8 cup cornstarch
  • 1 Tbsp Cooking with Greens Go To Blend
  • 2 stalks green onion
  • cooking oil
  • Thai sweet chili sauce
  • (optional) Thai fish sauce

Cut green onion into long thin strips and place in cold water until plating. Mix flour, cornmeal, cornstarch and Go To blend in a flat plate. Pat dry fish and cut diagonal slashes in each side of the fish, forming diamonds. Lightly coat fish in flour mixture, shaking off excess. Fill a wok 1/2 to 3/4 full (or use large deep fryer). Heat oil to 350 degrees. Cook fish until each side is golden brown, ensuring that entire fish is cooked (splash oil on any unsubmerged fish parts). Drain on paper towel. Serve atop coconut rice and garnish with green onion strips and Thai sweet chili sauce and Thai fish sauce.

Thai Fish Sauce

  • 3 cloves minced garlic
  • 1 hot pepper of choice sliced thinly
  • 2 Tbsp lime juice
  • 1 Tbsp Fish sauce
  • 1 tsp brown sugar
  • 1 Tbsp chopped green onion
