Leftover Dinner Eggrolls with Cranberry Sauce Vinaigrette

  • leftover chicken or turkey
  • leftover ham
  • leftover stuffing
  • leftover macaroni and cheese
  • leftover sweet potatoes
  • leftover collard greens
  • ...or any other leftover food
  • eggroll wrappers
  • water

chop leftover foods into bite sized pieces. Lay out eggroll sheets with corner facing you.  Brush top 2 edges with water. Place leftover foods in middle of eggroll sheet. Fold up bottom corner halfway. Fold in sides of wrapper. Continue to roll upwards until roll is closed. Deep fry or lightly spray eggrolls with oil and air fry until browned. Serve with gravy dipping sauce and cranberry sauce vinaigrette

Cranberry Sauce Vinaigrette

  • 1/2 cup of leftover canned cranberry sauce
  • 2 tbsp Balsamic vinegar
  • 2 tbsp olive oil
  • 1/4 tsp Pink Himalayan sea salt
  • pinch ground black pepper

Place all ingredients in food processor and serve. Can be refrigerated.
