Lemon Garlic Chicken

  • 1 lb boneless skinless chicken pounded to 1/2" thick
  • 1 tsp Cooking with Greens Lemon Red Bell Pepper blend 
  • 1 1/2 Tbsp Cooking with Greens Lemon Red Bell Pepper blend
  • 1/2 Tbsp olive oil
  • 1 1/2 Tbsp butter
  • 1/2 small shallot minced
  • 2 cloves garlic minced
  • 1 Tbsp flour
  • 1/2 cup heavy cream
  • 1/4 cup low sodium soy sauce
  • juice of 1/2 lemon
  • 1 Tbsp chopped fresh parsley
  • 1/2 lemon sliced
  • 1/2 red pepper chopped

Dry chicken with paper towels. Season generously with1 1/2 Tbsp Lemon red pepper blend. Heat oil on medium high and sear chicken until deeply browned. About 6-7 minutes each side.Set aside. In the same pan, Reduce to medium heat and add butter. Add in shallot, garlic and remainin 1 tsp Lemon red pepper blend. Cook until shallots soften. Add flour, and stir to evenly coat. Cook for 1 minute more. Stir in cream and broth until smooth. Scrape all browned pieces from pan. Bring to boil and reduce to simmer until sauce has thickened. Stir in lemon juice and garnish with parsley and chopped parsley.
