Rice Pilaf

  • 1/2 onion chopped 
  • 1/4 red bell pepper chopped
  • 1/4 cup sweet peas
  • 1/4 cup carrot chopped small
  • 1 cup long grain rice
  • 1/2 tsp tumeric
  • 1/2 tsp paprika
  • 2 cups chicken broth
  • 2 Tbsp Cooking With Greens Go To blend
  • optional chopped parsley

Melt the butter in a pot over medium heat. Stir in the onion, bell pepper, carrots and half the Go To Blend. Decrease the heat to low and sweat until the onion is translucent and aromatic but not browned, 3 to 4 minutes. Increase the heat to medium and add the rice. Cook, stirring frequently, until you smell nuts, another 3 to 4 minutes. Add broth, tumeric, paprika (or a pinch of saffron steeped in 1/4 cup hot water) and the remaining Go To Blend.  Increase the heat and bring to a boil. Once boiling, add peas and lower heat to low and cover pot. Cook until all liquid is absorbed. fluff. add in optional chopped parsley and serve.
