Shrimp Alfredo
- 2 Sticks unsalted butter
- 2 lbs shrimp peeled and deveined
- 1 to 2 tomatoes chopped
- 1 to 2 cups of baby spinach
- 1 stalk celery chopped
- 1 vidalia onion chopped
- 4 cloves garlic minced
- 1 1/2 tbsp Cooking With Greens Spicy Seafood Seasoning
- 1 tsp ground black pepper
- 2 cups Heavy Whipping Cream
- 1 cup grated Parmesan reggiano cheese
- 4 oz cream cheese
- 4 slices of bacon chopped(or other smoked meat)
In a large saucepan, brown bacon until crispy. Remove from heat and leave grease in pan. Cook shrimp slightly on each side. Remove from pan. Add chopped onion and celery to pan and cook until onion is translucent or slightly caramelized. Remove from pan. In same pan, melt butter until liquified. Add seasoning. Stir in Heavy cream allowing to come to simmer. In a microwaveable bowl melt cream cheese and stir into pan. Add Parmesan Cheese. Stir until melted. Simmer to thicken. In another pan, cook tomatoes for 3 to 4 minutes. Add tomatoes to the sauce. Add onions and smoked meat back to pan. Add spinach until wilted. Add shrimp. Taste and re-season if necessary. Serve over linguini.
