Shrimp and Chicken Salad with Barbecue Dressing
BARBECUE DRESSING
- 3/4 cup Sweet Cooking with Greens Barbecue Sauce (or any other barbecue sauce)
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- 3 tbsp butter
- 1 tsp Cooking with Greens Go To seasoning
- 2 tbsp lemon juice
Melt butter. Whisk all ingredients together. Serve.
SALAD
- 1 bag Spring Salad Mix
- 1 tomato sliced and halved
- 1/2 cup shredded cheese
- 1 avocado sliced
- 1 ear corn
- 1/2 cup candied walnuts
- 1 cucumber sliced
- 4 oz roasted chicken chopped
- 2 lbs peeled, de-veined shrimp
- 2 tbsp Cooking With Greens Spicy Seafood Seasoning
- olive oil
Place entire ear of corn in microwave for 4 1/2 minutes. Chop off bottom half of ear and squeeze out corn. Shuck kernels and set aside. In a bowl, toss raw shrimp with Spicy Seafood Seasoning. In a wok or saute pan, add olive oil and cook shrimp until done. Toss all ingredients together and drizzle with Barbecue Dressing.
