Super Moist Chocolate Cake and Icing
- 2 1/2 cups flour
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 cups white sugar
- 3 eggs
- 2 tsp Vanilla
- 1 cup milk
- 1 tsp expresso powder
- 1/2 cup vegetable oil
- 1 cup boiling water
Preheat oven to 400 degrees. Mix all dry ingredients together. In a separate bowl, mix eggs, vanilla, milk and oil. Slowly mix wet ingredients into dry bowl. Add boiling water and mix well (mixture will be wet). Pour into 2 greased round baking pans. bake for appx. 45 minutes. Cake is done when a toothpick comes out of the middle clean. Cool before frosting the cake.
Creamy Chocolate Frosting
- 3 sticks of softened butter
- 1 cup unsweetened cocoa powder
- 4 1/2 cups confectioner's sugar
- 1/2 cup milk
- 2 tsp vanilla
- 1/2 tsp expresso powder
Mix all ingredients well.
