Sweet Potato Pie
- 1⁄3 cup butter, softened
- 1⁄4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs beaten
- 3⁄4 cup heavy cream
- 2 cups mashed sweet potatoes
- 1 tablespoon vanilla extract
- 1⁄2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 qty 9" unbaked pie shell
- 1 tbsp lemon juice
- 1/2 package of instant vanilla pudding mix
Cream softened butter, lemon and sugar together. Add eggs beaten. Add cream, pudding mix and spices. Add sweet potatoes. Pierce bottom of prepared pie shell. In a 400 degree oven, bake pie shell for 10 minutes. Take out of oven and pour pie mixture into shell. Reduce oven to 350 degrees and cook for 40 to 50 minutes or until pie is done.
*Tip - Before filling pie shell, cover edges of pie with aluminum to reduce scorching.
