Vegetable Fried Rice

Vegetable Fried Rice

  • 3 cups day old cooked white rice (or use fresh rice)
  • 1/2 cup to 1 cup mixed thawed peas carrots and corn
  • 1/2 cup broccoli florets
  • 2 tbsp sesame oil
  • 2 to 3 tbsp low sodium soy sauce
  • 2 eggs
  • 1 onion chopped
  • 1 stalk chopped green onion

In a large wok, add sesame oil and heat on medium heat. add onion and vegetables. Cook until onion becomes translucent. Push vegetables to the side of the pan and scramble in 2 eggs. cook until soft scrambled and mix into vegetables. Add rice mixing well. Drizzle in soy sauce and cook for an additional 6 to 8 minutes. Toss in green onions and serve.
