Banana Brown Sugar Pancake

  • 4 3/4 cups all purpose flour
  • 1/4 cup brown sugar
  • 1.5 Tbsp baking powder
  • 2 tsp baking soda
  • 2tsp Cooking with Greens Pink Himalayan Sea salt
  • 3 large eggs beaten
  • 2 cups buttermilk
  • 2 cups milk
  • 1 stick melted butter
  •  2 tsp vanilla
  • 1 to 2 ripe bananas sliced
  • 1/4 cup candied pecans
  • OPTIONAL crispy bacon
  • brown sugar

In one bowl, mix flour,brown sugar, baking powder, baking soda, sea salt. In another bowl, mix beaten eggs, buttermilk, milk, melted butter and vanilla. Mix dry mix with wet mix. Mixture will be lumpy. Heat large griddle or pan with butter and a little olive oil. Pour mixture onto griddle. Place bananas, pecans and optional bacon on top uncooked pancake. Sprinkle on brown sugar. Once edges bubble, flip, brown and serve.
