Barbecue Cheesy Chicken Pasta
- 4 slices bacon or smoked turkey diced
- 1 to 2 Boneless skinless chicken breasts diced
- 3 cloves garlic minced
- 1/2 large onion diced
- 2 cups chicken stock
- 1 14 oz can diced tomatoes
- 1/4 cup heavy cream
- 1/4 cup half and half
- 1/4 tsp red pepper flakes
- 3 cups Rotini or other pasta
- 1 tbsp Cooking With Greens Go To Seasoning
- 1 cup shredded cheese
- 1 cup Barbecue sauce (see Sweet Cooking With Greens barbecue Sauce Recipe)
- 1 to 2 cups fresh baby spinach
In large saucepan or cast iron skillet, cook bacon until crispy. Drain off fat and Add onion and garlic. and cook until onion is translucent. Add chicken and cook for an additional 3 minutes. Add broth, tomatoes. milk and cream, red pepper flakes, pasta and Go To seasoning. Bring to boil and reduce. Cover and allow to simmer for 15 minutes. Stir in barbecue sauce, cheese and spinach. Serve and enjoy!
