Chef Wallace's Top Sirloin
- 6 6oz. Sirloin Steaks
- 2 1/2 Tbsp ground black pepper
- 1 1/2 tbsp Sea salt
- 2 tbsp olive oil for every 3 steaks
Bring steaks to room temperature. Heat cast iron pan. Add 2 tbsp olive to pan. right before pan starts smoking, add sirloins. Allow to sear for 4-5 minutes each side(medium rare). Allow steaks to rest on room temp cutting board for 3 minutes. Flip steaks every 30 seconds during this time to ensure that steaks remain juicy. Serve
