Hawaiian Spam Rice Bowl
- 1 can Spam diced into cubes
- 1 can pineapple chunks
- 1 large mango cut into cubes
- 1/2 poblano pepper diced small
- 4 stalks green onion diced small
- 2 tbsp plant based butter
- 3 tbsp olive oil
- 1/2 cup soy sauce
- 1 tsp fish sauce
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- 1/2 Tbsp Cooking with Greens No Salt Hawaiian blend
- 2 1/2 Tbsp Minced garlic
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp ground ginger
- 1/2 cup pineapple juice
- 3/4 Tbsp cornstarch
- Cooked Rice
Add 1 Tbsp olive oil to pan. Cook cubed Spam on medium high heat until each side is browned. Set aside. In same pan, add 1 Tbsp plant based butter and mango to pan. Cook until mango is slightly caramelized. Remove from pan and add 1 Tbsp butter to pan and add pineapple pieces. cook until caramelized. Remove from pan. In same pan add remaining olive oil and poblano peppers. Cook for about 1 minute and add in garlic, soy sauce, fish sauce, sesame oil, sesame seeds, Hawaiian blend, green onion, ginger and red pepper flakes. Allow to reduce slightly. Whisk pineapple juice and cornstarch together and add to pan. cook until sauce bubbles and slightly thickens. Toss in mango, pineapple and spam. Serve over cooked rice and top with an over easy egg.
