Italian Corn
- OPTIONAL 6 pieces of bacon cooked crispy and crumbled
- 1 lb sweet corn kernels
- 12 cherry tomatoes halved
- 4 tbsp sweet butter
- 1 small sweet onion minced
- 2 cloves garlic minced
- 1/2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 tbsp Cooking With Greens Go To Seasoning
- ground black pepper to taste
- Parmesan cheese to garnish
- chopped fresh parsley to garnish
add olive oil and melt butter in skillet. Add onion and tomatoes. Cook until onions are translucent. Add garlic. Cook for 2 minutes. Add Corn and seasoning. Cook on medium high heat until butter is reduced and corn is slightly browned. Toss in cheese and parsley and optional bacon and serve.
