Maple bacon Salmon Pinwheels

  • 1 large whole salmon filet
  • 8 to 12 oz cream cheese at room temperature
  • 2 tbsp butter
  • 2 cloves minced garlic
  • 1/2 to 3/4 cup  frozen spinach (or fresh)
  • 1/2 onion chopped
  • 1/2 to 1 cup bread crumbs (depending on your desired consistency)
  • 2 1/2 tsp Cooking with Greens Maple Bacon Seasoning blend
  • 1/4 cup shredded Parmesan cheese
  • 2 tsp Cooking with Greens Maple Bacon Seasoning blend
  • 2 to 3 slices bacon chopped
  • parchment paper

Preheat oven to 425 degrees. Cook chopped bacon, drain and set aside. In a saucepan, melt butter garlic and onion until translucent. Place frozen spinach in microwave and cook until done. Squeeze out in cheesecloth or a dark towel. Add to pan with Bacon and 2 tsp Maple bacon blend. Cook until combined. Add room temp creamed cheese, Parmesan and bread crumbs. Cook until all ingredients are combined. set aside. Place salmon filet flat on a piece of parchment paper. Season both sides of salmon with remaining Maple bacon seasoning. Place salmon in center of sheet. Spoon on spinach mixture, spreading out over filet. Roll filet and slice salmon into sections. Bake for 10 mins and brush Maple bacon glaze mixture atop pinwheels. Bake an additional 10 to 15 minutes and Serve!

 

Maple bacon glaze

  • 1 slices cooked bacon chopped
  • 2 Tbsp Pure maple syrup
  • 2 tsp brown sugar packed
  • 2 tsp Dijon Mustard
  • 1 tsp Cooking with Greens Maple Bacon Blend

whisk together ingredients and use to brush over salmon
