- 2 lb boneless, skinless chicken
- 1 cup mayo
- 1 cup shredded Parmesan
- 1/2 small onion minced
- 2 Tbsp Cooking with Greens Go To blend
- 1/2 cup panko crumbs
- 1/4 tsp Cooking with Greens Pink Himalayan Sea salt
Preheat oven to 375 degrees. Pat chicken dry. In a bowl, mix mayo, parmesan, onion, and spices. toss in chicken and cover all pieces thoroughly. Place chicken in a baking sheet with a raised rack that has been sprayed with nonstick spray. Sprinkle each side with panko breading (not too much). Bake for 40 minutes. Sprinkle with parsley and serve.
