Pineapple Shrimp

Pineapple Shrimp

  • 1 lb peeled and deveined shrimp
  • 3 cloves minced garlic
  • 1/2 cup pineapple juice
  • 1/3 cup sweet chili sauce
  • 2 tsp Sriracha sauce
  • 2 Tbsp honey
  • 2 Tbsp low sodium soy sauce
  • 1 cup chopped pineapple pieces
  • 1 tbsp water
  • 2 tbsp cornstarch

Mix garlic, pineapple juice, chili sauce, sriracha, honey and soy sauce in a bowl. Add in shrimp and allow to marinate for about 5 to 10 minutes. Remove shrimp from marinade and set aside. Add marinade to sauce pan. Add pineapple pieces and bring to simmer. Cook until slightly reduced. Prepare slurry by combining water and cornstarch. Slowly drizzle half to all into the sauce for desired consistency. Add in shrimp and cook until shrimp are just done. Serve immediately over rice.
