Potato Crusted Quiche

Potato Crusted Quiche

  • 2 to 3 potatoes peeled and thinly sliced
  • olive oil
  • 1 1/2 tbsp Cooking with Greens Go To seasoning
  • 1 tsp ground black pepper
  • 1/2 cup shredded parmesan cheese
  • 6 large eggs
  • 1/2 cup sliced crimini mushrooms (optional)
  • 1/2 vidalia onion chopped
  • 1 to 2 stalks green onion chopped finely
  • 1/2 cup baby spinach
  • 1/2 cup sweet red, orange or yellow pepper chopped
  • 1/2 lb bacon or smoked meat cooked and crumbled
  • 1 1/2 cups heavy cream
  • 1 cup shredded cheese

Preheat oven to 375 degrees. Toss potato slices with olive oil,  Parmesan cheese and half of the seasonings. place potato slices in a baking dish covering the bottom and sides of dish. place in oven and bake from 15 to 20 minutes or until potatoes are done. While crust is baking, mix  eggs, remaining spices and cream to form custard. Mix remaining ingredients into custard. Pour custard mixture into baking dish. Bake for 20 to 25 minutes. Quiche should still be wiggly. Serve.
