Sweet & Spicy Chicken

  • 1lb boneless, skinless chicken cut into chunks
  • 1 cup pineapple cut into chunks
  • 1 cup sweet corn drained
  • 1/4 cup pineapple juice
  • 1/4 cup chicken stock
  • 1 sweet or red onion sliced
  • 2 cloves garlic minced
  • 12 cherry tomatoes halved
  • 2 green onion stalks chopped
  • 1 sweet red pepper julienned
  • 1 pinch ginger powder
  • 1 to 2 tsp crushed red pepper flakes
  • 1 tbsp sriracha
  • 2 tbsp Cooking With Greens Herb Seasoning
  • 2 tbsp Cooking With Greens Go To Blend
  • Vegetable oil

Season chicken with 1 tbsp Go To Blend and 1 tbsp Herb Blend. Add 2 tbsp vegetable oil to hot skillet then add chicken, browning each side. Remove from pan. In same pan, add peppers and onions. Cook until onions start to soften. Add garlic and tomatoes. Cook for 2 minutes. Add chicken, sriracha and remaining seasonings. Add chicken stock and bring to simmer. Add pineapple, corn and pineapple juice. Cook until slightly reduced. Add green onion. Serve over pasta or rice. If you like a thicker sauce, add cornstarch and make a slurry.
