Chicken and Waffles with Maple Chicken gravy

CHICKEN
  • 2 cups buttermilk
  • 3 lbs boneless skinless chicken tenders
  • 3 tbsp paprika
  • 6 tbsp Cooking With Greens Go To Blend
  • 4 tbsp Cooking With Greens Italian Blend
  • 1 tbsp Cooking with Greens No Salt Onion Black pepper Blend
  • 2 tbsp pink Himalayan sea salt
  • 2 tbsp cayenne pepper
  • 3 cups flour
  • 1/2 cup corn meal
  • 1 gallon ziplock bag
  • vegetable oil
Put chicken in gallon ziplock bag. Pour buttermilk in bag and half of all seasonings. mix well and refrigerate for at least 2 hours.
Prepare flour mixture with corn meal and remaining spices. Take chicken pieces out of bag and dredge with flour. Cook in hot oil until both sides are brown. Drain pieces.
 
WAFFLES
  • 4.5 cups waffle mix
  • 3 eggs
  • 2 cups club soda
  • 9 tbsp vegetable oil
Mix all ingredients and cook in waffle iron (cut recipe in half if you don’t need oodles of waffles!)
 
MAPLE GRAVY
  • 2 to 3 tbsp butter
  • 1/3 cup flour
  • 1 1/2 chicken broth
  • 1 tsp Cooking with Greens No Salt Onion Black Pepper Blend
  • 2 tbsp Cooking with Greens Go To Blend
  • 1/4 cup 100% maple syrup
In hot saucepan, add butter and flour. Mix constantly until flour starts to slightly brown. While stirring, slowly add broth, a little at a time. Continually mix. Add spices. Let come to boil while mixing constantly. lower heat and allow to simmer for 5 minutes. Pour in Syrup. Taste and re-season. Serve over Chicken and Waffles.
