  • 2 lb boneless, skinless chicken
  • 1 cup mayo
  • 1 cup shredded Parmesan
  • 1/2 small onion minced
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1/2 cup panko crumbs
  • Pink himalayan sea salt
Preheat oven to 375 degrees. Pat chicken dry. In a bowl, mix parmesan, onion, and spices. toss in chicken and cover all pieces thoroughly. Place chicken in a baking sheet with a raised rack that has been sprayed with nonstick spray. Sprinkle each side with panko breading (not too much). Bake for 40 minutes. Sprinkle with pink Himalayan sea salt and serve.
