Corn Stir Fry with Shrimp

  • 3 slices of bacon chopped
  • 1/4 green onion chopped
  • 1/2 sweet pepper chopped
  • 1/2 sweet onion chopped
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 2 cups frozen corn
  • 1/4 to 1/2 lb cleaned, deveined shrimp
  • 2 tsp tomato paste
  • 3/4 tbsp Cooking With Greens Go To Seasoning Blend
  • 1 tbsp Cooking with Greens BBQ Tomato Blend
  • 1 tsp sriracha sauce
  • OPTIONAL: Shredded Parmesan Reggiano cheese

Cook Bacon until pieces are crispy and remove bacon pieces from pan. Sprinkle shrimp with BBQ Tomato blend and add to pan. Cook shrimp until done on both sides and remove shrimp from pan and bacon grease seperately from pan.  Add olive oil to pan and peppers, and onions. Cook until slightly softened Add garlic and corn. Sprinkle with Go To Blend and cook for 4 minutes.  Add tomato paste to bacon grease and add to pan. Sprinkle remaining BBQ Tomato Blend to pan and sriracha and heat thoroughly. Mix in bacon pieces. Serve.
