  • 1lb of New potatoes halved
  • 1 stick of plant based butter
  • 3 tbsps of olive oil
  • 1 large shallot minced
  • 1 1/2 tbsps of Dijon Mustard
  • 1 Tbsp No salt go to blend
  • 1 cup of miced parsely
  • 2 Tsps no salt nion black pepper blend /
  • 2 Tsps of pink himilayan sea salt
  • 1/2 cup of vegan parmesan cheese (or regular parmesan)

Preheat oven to 400 degrees. Toss halved new potatoes in 2 tbsp olive oil and place on baking sheet and bake for 20 to 30 minutes. Heat olive oil in pan and add minced shallot. Cook until slightly translucent. Add in butter and mustard. Mix until butter is melted and add seasonings. Add in parsley and remove from heat. Once potatoes are done, toss with Maitre'D butter. In a small baking dish, top with cheese and return to oven to melt cheese. Serve.
