Crispy Spam Pops

  • 1 can spam diced into small cubes
  • 4 eggs
  • 1/2 to 3/4 cup shredded cheddar cheese
  • 1/2 Poblano ( or other variety) pepper diced
  •  2 stalks green onion sliced thinly
  • 1/4 cup panko
  • Cooking With Greens No salt Hawaiian Blend
  • Cooking With Greens No Salt Sweet Smoke Blend
  • Cooking With Greens No Salt Onion Black Pepper Blend
  • Cooking With Greens No Salt Go To Blend
  • 1 1/2 cup Panko
  • 1 cup flour
  • bamboo skewers

Pulse diced spam slightly in a food processor. Place pulsed spam, 2 eggs, cheese, green onion, poblano, 1/4 cup panko and spices on a bowl. Mix well to combine.  Form mixture into a tube shape over the end of a bamboo skewer (tubes should be about the length of your finger) Place skewered meat mixture into refrigerator for a few hours to overnight to set. Once meat is set, place panko, 2 eggs whisked and flour on 3 separate shallow plates. Roll Spam pops in flour, then whisked eggs, then panko. Allow to sit for 5 to 10 minutes. Add enough cooking oil to a pot to cover meat skewers (or use deep fryer). Heat to 375 and cook until skewers are brown and crisp. drain and serve with Sriracha and Honey mustard
