Sweet Potato Pie Cinnamon Buns
- 1⁄3 cup butter, softened
- 1⁄4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs beaten
- 3⁄4 cup heavy cream
- 2 cups mashed sweet potatoes
- 1 tablespoon vanilla extract
- 1⁄2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon CWG Pink Himalayan sea salt
- 1 tbsp lemon juice
- 1/2 package of instant vanilla pudding mix
- 1 pack puff pastry or other pastry (2 sheets)
- 3/4 cup confectioner's sugar
- 1/4 cup heavy cream
- cinnamon
Cream softened butter, lemon and sugar together. Add eggs beaten. Add 3/4 cup cream, pudding mix and spices. Add sweet potatoes. Mix together. Lightly flour countertop and place 1 sheet of puff pastry. Spoon on sweet potato mixture evenly on surface of pastry and roll entire sheet of pastry into a log. Carefully slice roll into 1 inch slices. Place slices on a greased baking sheet (or use parchment paper) In a 400-degree oven, bake for 20 minutes or until done. Place cinnamon rolls on cooling rack to cool. In a small bowl, mix together confectioners sugar and 1/4 cup heavy cream. Pipe sugar glaze atop cinnamon rolls and top with a sprinkle of cinnamon. Serve warm or room temperature.
