Eggplant Parmesan

  • * 1 small eggplant sliced thin
  • * 2 eggs
  • * 1/2 cup milk
  • * 1 cup flour
  • * 1 cup parmesan cheese
  • * 1 cup garlic breadcrumbs
  • * 1 tbsp garlic powder
  • * 1 tbsp onion powder
  • * 1 tsp black pepper
  • * 1 tsp pink Himalayan sea salt
  • * 1 tsp Tony Sachiries Creole seasoning
  • * vegetable oil
  • * tomato sauce
  • * shredded mozzarella or provolone cheese
 
Place sliced eggplant on cooling rack. Salt both sides, and let sit for 1 hrs. Beat eggs and milk together in a container. Add creole seasoning. Mix remaining seasonings and flour in a second container . Mix parmesan and breadcrumbs together in a third container Dry eggplant with paper towels. Dip each slice into flour mixture, then egg mixture, then bread crumbs. Place breaded eggplant slice into hot oil. Fry until each side Brown. After all pieces are browned and drained, place on cooling sheet and spoon on tomato sauce. Top that with shredded cheese. Place in 350 degree oven for 10 minutes...serve.
