Lobster salad

  • 4 medium sized lobster tails cooked and diced into bite sized pieces
  • 1/3 cup mayo
  • 1.5 tbsp fresh lemon juice
  • 1 tsp fresh dill chopped
  • 1/2 cup celery center stalk chopped finely
  • 1/2 tsp dijon mustard
  • 1 tbsp green onion or chives chipped into thin strips
  • 1 tsp Cooking with Greens Spicy Seafood Blend
  • Avocado

In a bowl, combine lobster, mayo, lemon juice, dill, green onion and seafood blend. Taste and reseason if necessary. Serve topped with avocado slices on a salad, in a toasted bun, or as lettuce wraps.
