Sausage Stuffed Turkey Tenderloin Parmigiana

Sausage Stuffed Turkey Tenderloin Parmigiana

  • 2 to 3 turkey tenderloins
  • 1/2 lb ground beef
  • 1/2 lb sweet Italian sausage
  • 24 oz spaghetti sauce 
  • 1/2 diced onion
  • 1/2 red pepper chopped
  • 1/2 yellow pepper chopped
  • 10 cherry tomatoes halved
  • 2 to 3 cloves garlic chopped
  • 1 tbsp Cooking With Greens Maple Bacon Blend
  • 3/4 tbsp Cooking With Greens No Salt Italian Blend
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 tbsp sugar

Preheat oven to 400 degrees. In a large skillet, cook the sausage and half the Maple bacon Blend until browned. Remove from pan and allow to cool. In the same pan, cook onion and peppers until onions are slightly translucent. Add the ground beef and garlic and cook until browned. Add spaghetti sauce, cherry tomatoes, sugar, Italian Blend and remaining Maple Bacon Blend. Allow to simmer. Butterfly the tenderloins (cut into the tenderloins, creating a pocket) Mix the sausage and some of the mozzarella and stuff tenderloins. Seal closed with toothpicks. Place stuffed tenderloin in sauce, cover tenderloins with sauce, Parmesan and remaining mozzarella. Cover pan with foil, and Bake for 25 to 30 minutes. Serve over pasta.
