Crab Melt

  • 1 lb Lump Crab meat drained
  • 2 tsp minced chives
  • 2 1/2 tbsp mayonnaise
  • 2 tsp dijon mustard
  • 1 1/2 tsp lemon juice
  • 4 tbsp softened salted butter
  • sourdough bread slices
  • 1/2 tbsp Cooking With Greens Spicy Seafood Blend
  • Beefsteak tomatoes sliced 
  • Sharp cheddar cheese slices
  • Provolone cheese slices
  • Salted butter

In a smail bowl, whisk together, chives, mayonnaise, mustard, lemon juice and softened butter. Fold in lump crab meat, being careful not to break up the pieces. Butter one slide of a slice of sourdough bread liberally and place on hot griddle. Add 2 slices of cheddar, and 2 slices of provolone and 2 slices of tomato. Add crab meat mixture, 2 more slices of cheddar cheese and 2 more slices of provolone. Add Top layer of bread and butter outer side liberally. Allow griddle to brown the bread and melt cheese. Flip and brown other side. Slice and serve.
