Creamed Spinach

  • 10 oz fresh baby spinach
  • 4 oz cream cheese or vegan cream cheese
  • 1/2 cup shredded Parmigiano or vegan Parmigiano cheese
  • 1/2 small sweet onion diced small
  • 1 large clove garlic minced
  • 1 tbsp butter or plant based butter
  • 1/2 cup milk or dairy free milk
  • 1/4 cup heavy cream or dairy free whipping cream
  • 3/4 tbsp Cooking with Greens Go To Blend
  • 1/2 tsp Cooking With Greens No Salt Onion Black Pepper Blend
  • Water
  • Ice

In a large pot, bring  about 1/2 pot of water to boil. Add baby spinach and cook for 5 minutes. Immediately drain spinach and shock by placing in Ice bath. In a saute pan, melt butter and add onion. Cook until slightly translucent. Add garlic and cook for 2 minutes. Add in milk, cream and cream cheese. Once simmering, drain spinach and add to pan. Mix well, add spice blends and fold in parmesan. Serve.
