Savory CousCous

  • 1 cup pearl couscous
  • 1 1/4 cup Chicken broth
  • 1 cup chopped bacon or smoked meat
  • 2 cups baby spinach chopped
  • 1/2 cup chopped green pepper
  • 1 cup grape tomatoes
  • 1/2 large sweet onion chopped
  • 2 large cloves garlic minced
  • 2 tsp Cooking With Greens Go To Blend
  • 1.5 Tbsp Cooking with Greens Maple Bacon Blend

In a pot, cook bacon until fat is rendered and bacon is crispy. Remove bacon from pan. Add onion, pepper, garlic, and tomatoes to reserved bacon grease. Cook until vegetables soften. Add in chopped spinach. Cook until spinach wilts. Add in broth and cook until liquid comes to low boil. Stir in Couscous and cook for 3  to 4 minutes. Cover pan and allow to sit for 5 minutes or until all liquid is absorbed. Toss in bacon pieces and fluff. Serve.
