Vegetable Fried Rice
- 3 cups day old cooked white rice (or use fresh rice)
- 1/2 cup to 1 cup mixed thawed peas carrots and corn
- 1/2 cup broccoli florets
- 2 tbsp sesame oil
- 2 to 3 tbsp low sodium soy sauce
- 2 eggs
- 1 onion chopped
- 1 stalk chopped green onion
In a large wok, add sesame oil and heat on medium heat. add onion and vegetables. Cook until onion becomes translucent. Push vegetables to the side of the pan and scramble in 2 eggs. cook until soft scrambled and mix into vegetables. Add rice mixing well. Drizzle in soy sauce and cook for an additional 6 to 8 minutes. Toss in green onions and serve.
