Veggie Lo Mein

  • 1 pack of Lo mein noodles cooked and drained
  • 2 tbsp olive oil
  • 2 to 3 cloves minced 
  • 1 cup crimini mushrooms sliced
  • 1 sweet red bell pepper julienned
  • 1/2 cup snow peas
  • 1 cup spinach
  • 1 cup broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp Hoisin sauce
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 1/2 tsp sriracha sauce
  • 1 tsp brown sugar
  • 1 tsp Cooking with Greens Go To blend
  • chopped green onions
  • toasted sesame seeds

In a small bowl, whisk together soy sauce, hoisin, sesame oil, ginger, sriracha, brown sugar and Go To blend. Set aside. In a large wok, add olive oil to pan and vegetables. Cook until vegetables soften. Drizzle in sauce and cook for 2 minutes. Add in cooked Lo Mein noodles. Toss and warm through. Serve topped with chopped green onions, toasted sesame seeds and a drizzle of hoisin sauce.
